What are Flavor Powders?

OliveNation's flavoring powders are dry ingredients that can add taste, aroma, and in some cases, color, to recipes. Unlike liquid flavorings, these versatile powdered flavors can be used in dry mixes as well as in baking, cooking, and beverages. The composition and usage of flavor powders depend in some cases on how they are made.

  • Spray-Dried Powders, like our Flavored Powders and Extract Powders, mix liquid flavorings and carriers into an emulsion which is then dried at high heat into a shelf-stable powder that offers consistent, long-lasting flavor and aroma. Perfect for at-scale use in mix manufacturing or large batch production, spray-dried flavoring powders also offer superior solubility in water and other liquids. Some vegetables can be spray dried without using a carrier material.
  • Freeze-dried powders, like our Fruit Powders, are real dried fruits that are frozen and converted to vapor which dries as a fine powder. Because no heat is involved, freeze-drying retains more of the original ingredient's flavor, aroma, and color than other methods. In addition, freeze-dried powders retain nearly all the nutritional value of the original materials. However, because not all the components of real fruits are water soluble, freeze-dried powders will create a fine suspension in liquids, rather than dissolving completely.

  • Extract Powders - Provide concentrated and consistent taste, aroma, and color in baking, cooking, brewing, and RTD beverage or dry mix manufacturing. Coloration generally less vibrant than fruit powders but offers stability within high temperature processes. Alcohol-free powdered extracts have no aftertaste and offer superior shelf stability as well as solubility in water and other liquids.
  • Flavored Powders - Maximum shelf stability, consistency, and solubility. Pale coloration is great for flavoring baked goods, beverages, and mixes without adding color. Generally made using natural flavors and sometimes artificial flavors. Easy to scale for consistent taste/aroma in commercial bakery and manufacturing applications.
  • Dried Fruit Powders - Great for adding authentic, true-to-ingredient color, taste, and aroma. Ideal in smoothies, frosting, milkshakes, and edible decoration. Can be used in baking, but colors may fade in high heat and are sensitive to pH levels of other ingredients. Disperses well in water and other liquids. Suitable for special diets or clean-label commercial applications.
  • Vegetable Powders - Superior flavor and color with slightly more color stability than freeze-dried fruit powders. Disperses well in water and other liquids. Great for savory baked goods, dry mixes, RTD beverages, and dry mix manufacturing.
