What's the difference between Bittersweet, Semi Sweet, Baking & Dark Chocolate?

In the USA, the FDA has labeling standards for what can and cannot be called "chocolate," but does not offer a specific definition of what constitutes "dark chocolate." Instead, the standard calls out Semisweet Chocolate and Bittersweet Chocolate as subcategories of Sweet Chocolate. Per the standard, sweet chocolate contains at least 35 percent by weight of chocolate liquor (also known as cocoa mass or cacao mass). Chocolate liquor, together with cocoa butter, make up what is known as the cocoa solids contained in chocolate.

So what does this have to do with dark, bittersweet, and semisweet chocolates? Although they are technically interchangeable, chocolate called "Bittersweet" usually contains at least 70% cacao, while "Semisweet" has 60-70% cacao and contains more sugar. Both are considered to be types of dark chocolate (as opposed to unsweetened, white, milk, or compound chocolates). Unsweetened chocolate, like our cacao nibs, on the other hand, is made of 100 percent chocolate liquor without any sweetening agents at all.
