Callebaut 60-40-38 Dark Chocolate Callets are delicious& baking chips from Callebaut with a robust yet balanced flavor from a blend of cocoa beans from Ivory Coast, Ghana, and Ecuador. Designed for fast, even melting, these medium fluidity couverture drops contain 60% dry cocoa solids and 39% cocoa butter (fat). Callebaut's 60% dark chocolate is perfect for baking, chocolate work, and works wonderfully for ganache, mousse, puddings, and fillings. This premium quality couverture's deep, rich taste is delicious alone or in complex flavor profiles. Bulk Callebaut 60% dark chocolate is ideal for commercial bakery, restaurant, and foodservice applications where a high quality couverture for all-around use is desired. This versatile chocolate's medium fluidity (3 drop) makes it a perfect choice for use in cakes, cupcakes, ganache, buttercream, fillings, pastry, enrobing, dipping, covering, and molding. When tempered, Callebaut 60-40-38 dark chocolate callets offer superior shine and snap.
Storage and Shelf Life:
Chocolate must be kept in a cool (preferably below 65 F) and dry environment. When kept in proper storage chocolate can be in good condition for a year or two or even longer. Chocolate is susceptible to picking up off notes from strongly flavored products such as caraway, onion, garlic, etc., and should be stored separately.
Occasionally light-colored streaks or film may appear on the surface of the chocolate. This occurs naturally and is a characteristic of couverture chocolate. It will disappear when the chocolate is re-melted.
Requires tempering.

Smooth and full bodied. Similar to Ghirardelli, but creamier, and without the sourness. Arrived in perfect condition in October in Virginia--80 degrees daytime high, no melting.
