Made using classic European-style methods, these easy-to-melt round wafers offer a minimum of 58% cocoa solids, 47.76% cocoa mass, and 11.94% pure cocoa butter. OliveNation brand dark 60% chocolate melting chips have a 38% total fat content and excellent fluidity for chocolate-making and confectionery work such as coating, enrobing, and molding. The deep chocolate flavor profile has sweet notes with a hint of vanilla and is delicious in creams, fillings, ganache, and mousse as well as cakes and other baked goods. Bulk 60% dark chocolate melting chips are an excellent everyday choice for baking, confectionery, patisserie, and foodservice applications. The small round shape or these couverture wafers allows them to melt easily even in commercial-scale use. The high percentage of cocoa solids (60%) and 38% total fat content give this couverture a rich bittersweet/sweet flavor with smooth mouthfeel. STORAGE: For best results, store chocolate in a cool (preferably below 65 F) and dry environment. Store chocolate separately from strongly flavored or scented products such as caraway, onion, garlic, etc. to avoid picking up off notes that could impact chocolate flavor.
Occasionally light-colored streaks or film may occur on the surface of the chocolate. This is a natural characteristic of fine chocolate and will disappear when the chocolate is re-melted.
