Emulsions are generally the preferred choice of professional bakers because the thicker, water based formulations don't evaporate as quickly as extracts, giving baked goods better flavor and richer aroma than extracts. Emulsions are also thicker than extracts and distribute more evenly in batters and icings.

Each flavor in this set of 6 emulsions is perfect for flavoring cakes, muffins, pies, fondants, frostings, fillings, and more. Please note that for chocolate-making and candy-making applications, we recommend using extracts instead of emulsions due to the high water contents.

To use baking emulsions, simply substitute emulsions in recipes calling for extracts. One teaspoon of extract = 1 teaspoon of emulsion.
