Why is Strawberry Emulsion better than extract? Emulsions are water-based, while extracts are alcohol-based. Since It's water-based, Strawberry Emulsion doesn’t evaporate as quickly as an extract, resulting in more flavorful and aromatic baked goods. Strawberry Emulsion is also thicker than strawberry extract and distributes more evenly in batters and icings. 

How is Strawberry Emulsion used? You can substitute Strawberry Emulsion in most recipes calling for strawberry extract.1 teaspoon of strawberry extract = 1 teaspoon of Strawberry Emulsion. Try it in cakes, cookies, fillings, and icings. Due the water content of emulsions, it's best to use an extract instead of an emulsion in candy, including chocolates and truffles. However, Strawberry Emulsion is suitable for candy fillings.

    Added to my fresh Strawberry Ice Cream with fresh Strawberries. Also made Strawberry Sorbet. Great neighborhood favorite

    Great product. It adds enhanced natural strawberry flavor to my baking a great pink color without adding extra food coloring.

    I was looking for something to give my strawberry cake batter a bit more strawberry flavor and this was it. Like the almond emulsion it is full of flavor and was a great addition to may cakes. Will be purchasing this again!!!

    I had never tried an emulsion before and did not think it tasted like strawberries.
