This Callebaut C823 Milk Chocolate Brick is the same premium-quality Belgian chocolate as the classic 11-pound block, only in a smaller, easy-to-use size. The small, irregular broken blocks are significantly easier to chop, shave, and store. Each milk chocolate brick is made of Callebaut's #823 Milk Chocolate with 33.6% (minimum amount) cocoa solids, 20.8% milk solids, and a total fat content of 36.2%. This premium quality ingredient is a fantastic-tasting general-purpose chocolate that is excellent for a wide variety of applications and recipes. The Callebaut 828 milk chocolate brick offers standard fluidity and moderate-to-thick viscosity as well as darker color and fabulous intense cocoa taste with creamy texture and hints of caramel.
This premium quality milk chocolate can be used for medium (rather than thin) shell molding and dipping, and will produce a slightly thicker shell. Chop or shave the milk chocolate brick for use in a wide variety of applications including ganache, mousse, fillings, sauces, and baking. This ingredient can also be used instead of chocolate chips in cookies and cupcakes, but they may melt more than standard chips during baking. This fabulous Belgian chocolate is ready to use and the flavor and texture are exceptional. Product of Belgium.
1-lb brick sizes range from 0.8 lb to 1.2 lbs per brick. 8-oz brick sizes range from 0.4 lb to 0.6 lb per brick.
Storage and Shelf Life:
Chocolate must be kept in a cool (preferably below 65 F) and dry environment. When stored properly couverture chocolate can remain in good condition for a year or two or even longer. Premium quality chocolate is susceptible to picking up off notes from strongly flavored products such as caraway, onion, garlic, etc. and should be stored separately.
Occasionally there may be light-colored streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of fine chocolate. It will disappear when the chocolate is re-melted.
Requires tempering.
