This Callebaut CW2 White Chocolate Brick is a delicious couverture for baking, confectionery, and chocolate work. Based on the same formulation as Callebaut's classic W2 recipe, the CW2 formulation offers the same delicious flavor but contains less fat for lower fluidity. Each white chocolate brick is made from a 11-pound block of CW2 white chocolate, broken into smaller, easy-to-use size pieces. This premium ingredient has 25.9% cocoa solids, 33.9% total fat and a hint of vanilla. This low fluidity Belgian white chocolate brick is perfect for baking cakes, cookies, ice cream, and the thicker fluidity is ideal for large-piece molding, as well as enrobing, ganache, and so much more. Callebaut's CW2 formulation has a rich, deep flavor and delivers a glossy finish and classic snap when tempered. Try using this white chocolate brick to create cream desserts, mousse, and ice cream, or bake fantastically flavored cakes, cookies, cupcakes, and pastries.
1-lb brick sizes range from 0.8 lb to 1.2 lbs per brick. 8-oz brick sizes range from 0.4 lb to 0.6 lb per brick.
Storage and Shelf Life:
Chocolate must be kept in a cool (preferably below 65 F) and dry environment. When stored properly couverture chocolate can remain in good condition for a year or two or even longer. Premium quality chocolate is susceptible to picking up off notes from strongly flavored products such as caraway, onion, garlic, etc. and should be stored separately.
Occasionally there may be light-colored streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of fine chocolate. It will disappear when the chocolate is re-melted.
Requires tempering.
