Callebaut 823 33% Milk Chocolate

Callebaut 823 33.6% Milk Chocolate Callets are a general-purpose chocolate that is excellent for all your milk chocolate recipes. The Belgian milk chocolates are ideal in various applications and perfect for milk chocolate ganache. Using Callebaut 823 33% Milk Chocolate saves time because you don't have to shave or break the small round discs (known as "callets") into pieces for easy melting. It is ready to use and the flavor is exceptional (It may melt down a little more than typical chips in baking). Moderate-to-thick in viscosity, it can also be used for medium (rather than thin) shell molding and dipping, and will produce a slightly thicker shell. It has a darker color, an intense cocoa taste, smooth with caramel flavors and creaminess. Product of Belgium. Ingredients: 33% cocoa solids, 21.8% milk solids

Storage and Shelf Life:

Chocolate must be kept in a cool (preferably below 65 F) and dry environment. When kept in proper storage chocolate can be in good condition for a year or two or even longer. Chocolate is susceptible to picking up off notes from strongly flavored products such as caraway, onion, garlic, etc., and should be stored separately.

Occasionally there may be light-colored streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of fine chocolate. It will disappear when the chocolate is re-melted.

    I was so disappointed in this chocolate. No chocolate taste. I’ve had to find another milk chocolate that’s really good to hopefully mix with this so it isn’t a complete waste of money.
