OliveNation Premium 64% Dark Couverture Chocolate is made using a blend of African cocoa beans and made using classic European-style methods. Offering excellent fluidity, these versatile wafers contain a minimum of 64% cocoa solids, 54% cocoa mass, and 12% pure cocoa butter. OliveNation brand dark bittersweet chocolate melting chips have a small round shape that makes it easy to create delicious creams, fillings, ganache, and mousse. These premium quality couverture wafers are great for chocolate-making and confectionery work including molding, enrobing, and truffles. Bulk dark bittersweet chocolate melting chips are perfect for both home bakers as well as professional use in commercial bakery, patisserie, restaurant, and foodservice applications. The high percentage of cocoa solids (64%) and 41% total fat content give this couverture deep, earthy notes that create decadently rich cakes, cookies, mousses, and creams with smooth, silky mouthfeel and a superior shine and snap when tempered.

STORAGE: For best results, store chocolate in a cool (preferably below 65 F) and dry environment. Store chocolate separately from strongly flavored or scented products such as caraway, onion, garlic, etc. to avoid picking up off notes that could impact chocolate flavor.

Occasionally light-colored streaks or film may occur on the surface of the chocolate. This is a natural characteristic of fine chocolate and will disappear when the chocolate is re-melted.

Requires tempering.
