Because both the green and red chocolate melting wafers are made of confectionery coating and not couverture chocolate, no tempering is required, making this an easy recipe for anyone to make.
Ingredients:
- Red Candy Melting Wafers (8 oz)
- Light Green Candy Melting Wafers (8 oz)
Equipment Needed:
- Baking Sheet
- Parchment Paper or Silicone Baking Mat
- Microwave-safe bowl (if using microwave method)
- Double Boiler or Pot and Heat-proof Bowl (if using stovetop method)
- For Decoration/Drizzle: Pastry Bag, Toothpick/Knife/Skewer
Directions:

For Layered Chocolate:
- Following directions shown below, make base layer of chocolate and allow to fully harden naturally or in refrigerator.
- When base layer is completely hardened, make top layer according to directions below including "Top Layer Only" direction and skipping "Single Layer Only" direction.

For Single-Layer Chocolate:
- Follow the directions below, including the "Single Layer Only" direction and skipping "Top Layer Only" direction.
Microwave Directions:
- Place first color of Compound Chocolate Melting Wafers into heat-safe, microwave-safe bowl. If making two chocolate layers with decorative drizzle, reserve approximately 2 ounces for decoration. Follow directions below, then repeat with second color.
- Microwave in 30-second intervals, stirring between each interval.
- When chocolate is almost fully melted, reduce to 15-second or 10-second intervals to avoid overheating or burning.

Working quickly, spread the chocolate onto a baking sheet lined with either parchment paper or a silicone baking mat. Tap the sheet gently on the counter to even out the layer.
- TOP LAYER ONLY:
- Working quickly, spread the chocolate on top of previously made chocolate layer on baking sheet. Tap the sheet gently on the counter to even out the layer.
- DECORATIVE DRIZZLE:
- Working quickly, use a piping bag or spoon to drizzle the contrasting color chocolate in either a random pattern (for modern-looking drizzle) or straight lines (for feathered effect). To create feathered effect, lightly drag a toothpick, knife, or skewer through the lines in an up-and-down motion.
- Allow bark to harden, either in refrigerator or naturally at room temperature.
- When bark is completely cooled and hardened, break into bite-size pieces using hands or knife.
- Enjoy!
Stovetop Directions:
- Fill a pot or the bottom section of a double boiler 1/8 to 1/4 full with water. Bring to gentle simmer.
- Place first color of Compound Chocolate Melting Wafers into heat-safe bowl or top section of double boiler and place on top of pot of water, stirring frequently until chocolate is melted.
- Remove bowl containing chocolate from pot. Make sure to wipe away any condensation from bottom of bowl before pouring out chocolate.
