Underrated Seasoning
Ive been liberally sprinkling sumac on my Mediterranean food for many years now. Its a subtle lemony spice that is extremely versatile either in marinades or used at the table...or both. This version is as good as youll find at your favorite Lebanese or Turkish restaurant. Its just tart enough to impart its flavor but it wont overpower. Its great in soups on grilled food like meat fish or vegetables added to rice and water before steaming or sprinkled on scrambled eggs. Try it mixed with a little salt and vegetable or grapeseed oil. Use that to marinate boneless skinless chicken thighs (substitute zaatar or ras el hanout as desired). Grill and serve over basmati rice.
