OliveNation Premium 55% Dark Couverture Chocolate is a rich semi-sweet all-purpose chocolate made using traditional European-style methods. These easy-to-melt round wafers offer a minimum of 53% cocoa solids, 42.78% cocoa mass, and 11.94% pure cocoa butter for smooth, even melting for a wide variety of baking, patisserie, and confectionery applications. OliveNation brand semi-sweet dark melting chips offer rich chocolate taste balanced by sugar and a hint of sweet vanilla, making these couverture chips a great choice for creating creamy desserts, fillings, ganache, and mousses, as well as delicious aromatic cakes and cookies. STORAGE: For best results, store chocolate in a cool (preferably below 65 F) and dry environment. Store chocolate separately from strongly flavored or scented products such as caraway, onion, garlic, etc. to avoid picking up off notes that could impact chocolate flavor.
Occasionally light-colored streaks or film may occur on the surface of the chocolate. This is a natural characteristic of fine chocolate and will disappear when the chocolate is re-melted.
