Liquid Lecithin by OliveNation is extracted from soybeans. It can emulsify, moisturize, and preserve foods. Candy makers use Liquid Lecithin as an emulsifier to make chocolates, caramels, and taffy. Our food grade Liquid Lecithin can thin chocolate, and it's more cost effective than cocoa butter. But, use cautiously because too much Lecithin can thicken chocolate.
Other Ways to Lecithin
* Use to prevent sugar from crystalizing.
* Lecithin is a mild preservative and conditioner for bread doughs. Suggestion: Use 2 to 3 teaspoons per 3 cups of flour.
* Combine with vegetable oils to reduce the amount of high-calorie oils needed for sauteing food and greasing pans.
