Callebaut W2 28% White Chocolate Callets for Confections, Baked Goods, Creams

  • Premium Belgian White Chocolate from Callebaut
  • 28% Cocoa Butter Content for Smooth Texture & Medium Fluidity
  • Delicious, Creamy Taste with Hint of Vanilla
  • Ideal for Coating, Dipping, Cream Fillings, Mousse, Ganache, Baking

Callebaut W2 28% white callets are made with 28% cocoa butter, premium milk powder, fine sugar and a touch of vanilla. This gourmet couverture has a smooth and creamy mouthfeel, with elegant satin shine and crisp snap when tempered. Callebaut's W2 formula 28% white is an all purpose white chocolate with medium fluidity that can be used for ganache, mousse, dipping, candy making, decorating and baking. The drop-like shape of these callets is ideal for easy, smooth melting. Use Callebaut 28% white chocolate callets in place of white chocolate chips in cakes, cupcakes, and cookies, or create delectable creams, ganache, mousse, and frosting with rich, creamy taste. The medium liquidity of this premium couverture makes it perfect for fountains as well as baking and confectionery work.

Storage and Shelf Life:

Chocolate must be kept in a cool (preferably below 65 F) and dry environment. When stored properly couverture chocolate can remain in good condition for a year or two or even longer. Premium quality chocolate is susceptible to picking up off notes from strongly flavored products such as caraway, onion, garlic, etc. and should be stored separately.

Occasionally there may be light-colored streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of fine chocolate. It will disappear when the chocolate is re-melted.

Requires tempering.

Packaging Note: For your convenience OliveNation will sometimes re-package products into smaller size containers. Therefore, ingredients we distribute from other brands may not arrive in the original manufacturer packaging.

PLEASE NOTE: This product is intended for culinary uses only: cooking, baking, and other human food applications.

Excellent coveture white chocolate with lovely vanilla flavor

Posted by Laura Gluvna on Feb 10th 2025

This is one of the best white chocolates I’ve ever had. Most are just sweet with no real flavor. This has a wonderful vanilla flavor without being overly sweet. Holds a temper well, and made beautiful chocolate decorations for me. Will continue to use!

I got this for chocolate making and it is so delicious! White chocolate isn’t my favorite as I find it usually too sweet, but this one is perfect! I made a ganache filled bon bon. This melts evenly and tasted delicious! I’m going to buy this again for sure
