Blueberry Emulsion is also thicker than blueberry extract and distributes more evenly in batters and icings.
How is Blueberry Emulsion used? You can substitute Blueberry Emulsion in most recipes calling for blueberry extract. 1 teaspoon of blueberry extract = 1 teaspoon of Blueberry Emulsion. Try it in cakes, cookies, fillings, and icings. Due the water content of emulsions, it's best to use an extract instead of an emulsion in candy, including chocolates and truffles. However, Blueberry Emulsion is suitable for candy fillings.
