OliveNation Baking Ammonia is a versatile powdered leavening agent used to make baked goods extra crispy. Also known as Ammonium Carbonate, Hartshorn/Hartshorn Salt, and Bakers Ammonia, this powder is common in old-fashioned cookie and cracker recipes. The effect is similar to both baking soda and baking powder, but without the alkaline taste or after-taste. Our bakers ammonia for baking cookies and crackers creates extra-tender, light, flat, and super-crunchy texture, making it ideal for both home and commercial or retail bakery applications. This powdered ammonium carbonate has a strong odor that will dissipate during baking. Bulk bakers ammonia is perfect for home or commercial production of sweet or savory crackers, classic ginger or lemon snaps, and other traditionally crispy, crunchy, flat cookies.
This ingredient is NOT recommended for use in cakes or other large baked goods. For large volume products we recommend using baking soda and/or baking powder as leavening.
STORAGE: For best results, store Baking Ammonia in an airtight container; it will evaporate if not correctly stored.

High quality ammonia, very reasonable pricing

Left a residue of ammonia taste. Did not perform better than baking soda & baking powder. First time I've baked with the product, but I did follow the recipe and actually baked the cookies longer to cook off any residue. So, it could be my inexperience, or it may just be the nature of the product.
