    I recently bought a small bottle of this emulsion to try. I ended up ordering a MUCH larger bottle for my regular collection. The product is very true to its name. I have used it in baked goods, icings, and candy items. I am a huge fan of OliveNation products. I literally have dozens of their extracts and emulsions. The flavors are true, without chemical tones. OliveNation is always my first choice in flavorings.

    It really does mimic the taste of a true pate sucree. My bakery is focused on making lighter versions of decadent desserts with focus on fresh fruits. The cake I use this emulsion in is my best-seller.
