Our Pecan Muffin Mix has all the delicious flavor of a classic Southern pecan pie, but in easy single serving form. This easy to use mix requires only the addition of eggs and butter* to make. Use this Pecan Muffin Mix for standard-size muffins with dense texture and gooey centers that taste just like pecan pie. For a lighters, fluffy texture, use mini size baking pans. Bulk Pecan Muffin Mix for standard or mini muffins is a versatile, easy-to-prepare mix that is great for making delicious and flavorful treats with a classic Southern taste. Try them for breakfasts, brunches, lunchbox treats, teatime, and desserts. The rich caramelized buttery flavor and nutty taste will make these an instant favorite for home or as a base for commercial bakery products.
BASIC PREPARATION: For 12 Standard Size Muffins / 36 Mini Muffins:
Note: standard size muffins will be more dense and will have a gooey center. Mini size muffins will have a lighter texture.
- 10 oz. Pecan Muffin Mix
- 2 eggs, beaten
- 1 stick butter, melted*
*Note: Melted margarine may be substituted 1:1 for melted butter. If margarine is used instead of butter, the finished muffins will have a more cake-like texture and will not have a caramelized butter taste.
DIRECTIONS:
- Spray tin(s) with flour-based cooking spray.
- Stir all ingredients together in mixing bowl until blended.
- Fill tins 1/2 full. Do not over-fill.

Bake in pre-heated 350°F oven according to pan size:
- Standard muffins: 20-25 minutes.
- Mini muffins: 12 minutes.
- Remove muffins from oven. Immediately remove from tins and place on a cooling rack or countertop to cool.
- Allow muffins to cool completely before (optional) topping or decorating.
ADD-INs & TOPPING OPTIONS:
- Pecan Nuts: Mix 2 ounces chopped pecans into batter and place a single pecan half flat side down on top of each muffin before baking.
- Drizzle caramel topping sauce over cooled muffins
- Drizzle cooled muffins with royal icing
When baking at high altitudes, add 1/3 cup flour and increase baking time.
