Storage and Shelf Life:

Blast of great flavor but lacking depth.
I just bought 5 cocoas from Olive Nation to choose the best for out hot chocolate drinks. Valrhona was 2x the cost of the others. It has a great flavor but little to no finish. It may be best mixed with another cocoa, which we haven't tried yet.

Once I used this cocoa in baking I knew I would never go back to any other cocoa. In a taste test with another brand, everyone who tested both desserts choose the Valrhona!
