Description

Sucraneige or Sucre Neige is preferred by French chefs and bakers: unlike confectioner's sugar it will not melt or disappear on top of cakes, cookies or other baked goods even when they are warm from the oven or refrigerated under plastic wrap. Also known as Snow Sugar, it is finely powdered  and looks evenly, perfectly sprinkled on top of icing, whipped cream or fresh, warm donuts and muffins.     I bought this to sprinkle on some fresh berries decorating a wedding cake. I tested it by sprinkling it on some berries one night and let them sit until morning. In the morning, they looked like I had just dusted them. It worked great for the wedding and everyone loved the look.

    Pros and Cons

    Pros:

    I have orderd from the company before. The products are great, high quality products. This particular product I purchased first because it is gluten free and was confirmed to be gluten free from the company. It works as it should.

    Cons:

    It significantly lacks flavor. In comparison to the same product offered by wholesale distributor, Sysco, it is a great working flavorless powder. You'll definitely have to get your flavor from the pastry item that you are placing it on, or seek a powdered vanilla to add flavor to this product. The same product offered by Sysco is that of which we are all used to - great flavor, classic snow sugar topping that we are all used to on items such as funnel cakes.

    The sucre neige was the "crowning glory" of my holiday baking. Sweet, snow topped creations without it disappearing like powdered sugar :)
