8 oz (240 g) Creme Brulee powder
1 quart (907 g) half & half
1 quart (907 g) heavy cream
Mix the Creme Brulee mix with 1/2 of the half and half and heavy cream.
In a pan, combine the other 1/2 of the half and half and heavy cream. Bring to a boil.
Whisk the powder mixture into the hot liquid. (It is important to add the powder while keeping the liquid on the heat.)
Return to boil for 1 minute, stirring constantly. Pour mixture into serving dishes and refrigerate for a minimum of 2 hours. The mixture sets while cooling. Makes 16 4-oz servings.
