Description
Long a staple of French cooking, Verjus is an acidic, sour liquid that is made from unripe green grapes. Due to its mild acidity, it is an extremely versatile ingredient that will enhance poultry, game, fish, seafood, stews, marinades, sauces and even salads. Use it as a marinade. It is also used to heighten flavor in the same manner that lemon or vinegar would be used. Less acidic than vinegar, it is perfect for salad dressings and as a pan de-glazer. Verjus is produced in the manner of fine wine, yet because of the low acidity level it will not distort the characteristics of a good table wine being enjoyed with the meal.

Verjus
We bought this specifically for a mustard recipe we saw. It is delicious. After reading the reviews, I am looking forward to trying it in other recipes. It's a unique flavor profile and the actual product itself is hard to find so kudos to Olivenation for carrying such a quality product. Thank you.

Distinctive
I use this item as a touch of added tartness to a Gin and Tonic water cocktail as well as in the standard Martini. It supplies another layer of taste and complements the above drinks. Just a few drops are required as this extract of the grape is very potent.

I had never heard of or used this product before but it was wonderful in the dressing for my roasted veggie and goat cheese pasta salad.
