If you have used pistachio oil in the past, you know that it has a very assertive flavor. It is this powerful flavor that makes it ideal for certain dishes. For pastries and fruits as well as salty dishes the oil works perfectly. It is also delicious on salads with endive, romaine, mche (mixed young greens). Married with balsamic vinegar or simply lemon juice it makes a delicious dressing. Combined with red beets, avocadoes, apples and pears it is delicious. Drizzle it on smoked or grilled fish as well. High in unsaturated fatty acids, pistachio oil has excellent health benefits.
