Nocciolata is truly an artisanal product. It is produced from an old family recipe of the Rigoni family. As is the case with most artisanal products the Nocciolata is produced in a slow, time consuming process. Carefully selected ingredients are milled to form an extra fine chocolate powder. This step is followed by the all-important phase of conching, a process by which fine chocolate is blended to produce a smooth, homogeneous spread. The cream used is allowed to settle overnight before it is filtered and packed. An entire day is necessary to produce this delicious finished product.
