Now you can make Welsh cakes at home with Copper Kettle Bakery Welsh Cake Mixes. A cross between a scone and biscuit, Welsh cakes are soft, tender handheld cakes. They're just perfect! In Wales, Welsh cakes are traditionally served at breakfast and teatime, and they're a favorite after-school snack. These delightful cakes are not too sweet. You can enjoy them with or without butter or jam. They are also delicious served with wine and cheese after dinner.

We offer three varieties of Copper Kettle Bakery Welsh Cake Mixes: Currant, Cranberry, and Chocolate Chip. They're easy to prepare. After combining the ingredients, Welsh cakes are cooked on a griddle or frying pan in small batches like pancakes – so there's no need to heat the oven. These mixes are proudly made in the USA.

How to Make Welsh Cakes with Copper Kettle Bakery Welsh Cake Mixes:

Tools: Rolling pin, large bowl, small bowl, large spoon, fork, whisk, and a frying pan or electric griddle. You can also use a food processor to mix the batter.

Ingredients: Copper Kettle Welsh Cake Mix, butter, milk, and egg.


Preheat an ungreased frying pan to medium heat or an ungreased electric griddle to 250 degrees F.  

In a large bowl or food processor, add mix and butter. Cut butter into mix with a fork, or pulse in a food processor until mix resembles coarse meal. Note: softened butter makes this step go faster. If using a food processor, pour mixture into a large bowl.

Mix chocolate chips, currants or cranberries into mixture (depending on which mix you selected).

In a small bowl, whisk egg and milk.

Gradually add egg mixture to dry mixture. Gently blend until it resembles a smooth ball of cookie dough. Dough should not be wet. Note: you may not need all the liquid. 

Turn dough onto a lightly floured surface, dust rolling pin with flour and roll to 1/3-inch thick, about the thickness of a wooden spoon handle.  Cut with a 3-inch round cutter or cup, re-rolling scraps until you have approximately 12 cakes. 

Cook 5 minutes per side until cooked through and golden brown. Cakes will rise slightly when cooking. 

Cool on a rack or paper towel and enjoy.  Store or freeze leftovers in an airtight container. 

How long do Welsh Cakes keep? Kept in a sealed container they are best eaten within 7-10 days. Welsh Cakes can also be frozen for a month or so in an airtight container.
