Traditional Cannoli Filling

Ingredients

  • ■   16 oz (1 lb) powdered sugar
  • ■   2 oz vanilla extract
  • ■   4 oz cinnamon oil
  • ■   8 oz mini chocolate chips
  • ■   ground nutmeg

Description

1 3/4 cup or 15 oz ricotta impastata or highest quality ricotta cheese (may use whole milk ricotta 1/3 cup powdered sugar 1 teaspoon vanilla extract 1 drop cinnamon oil (no more!) 1/2 mini chocolate chips 1/8 tsp of ground nutmeg diced candied lemon or orange glazed green cherries cannoli shells from your local bakery or grocery store Drain ricotta cheese for 24 hours until very dry. Mixed firm ricotta in a bowl with chocolate chips and sugar lightly with a spoon. Add remaining ingredients. Add diced candied lemon or orange. Fill each cannoli with the ricotta cream with a pastry bag or spoon. Fill just before serving Garnish with green glazed cherry and or drizzle with melted chocolate. recipe from cookingwithserena.com
