Peach Iced Tea

  • ■   2 oz Organic Earl Grey Tea/Margaret’s Hope Vintage Tea
  • ■   2 oz Pure Peach Extract

Description

• 1 ounce tea leaves/about 1/3 cup (Organic Earl Grey Tea or Margaret’s Hope Vintage Tea or Darjeeling 2nd Flush) • 1 lemon, sliced • 1 teaspoon Pure Peach Extract (or more, to taste) • 1 quart boiling water • 8 cups ice cubes • 1/2 cup Caster Superfine Sugar (more or less, to taste) • 8 sprigs mint (optional) • 1 peach, pitted and sliced (optional) Preparation: Place tea, lemon , peach extract, and ginger in a heatproof container and add boiling water. Let tea steep 7 to 8 minutes. Stir in Caster Sugart. Place 4 cups of the ice in a pitcher, then pour in tea. Serve in glasses over remaining ice and garnish with mint and peach slices, if desired.
