Ingredients

Description

2 1/2 cups shredded coconut 1/4 lite corn syrup 12 whole walnuts, pecans or almonds 1 teaspoon vanilla extract dash of salt 1 lb dark chocolate by OliveNation Recipe adaped from blog.candiquik.com

  • 1. Heat corn syrup over medium heat until simmering, stirring frequently.
  • 2. Combine heated corn syrup, coconut, vanilla and salt in medium bowl. Mixture will be very sticky.
  • 3. Using your hands form 1 tablespoon into a oval shape (3/4 X 2
  • 4. Press nut on top.
  • 5. Use up all of coconut mixture.
  • 6. Chill in freezer for 20-30 minutes.
  • 7. Melt chocolate in microwave or in double boiler until smooth.
  • 8. Carefully dunk each coconut candy into melted chocolate using a fork or chocolate dipping fork. Use a spoon to pour chocolate over the top.
  • 9. Gently shake or tap to remove excess chocolate.
  • 10. Place on wax lined baking sheet to set. Store at room temperature.
