Flourless Chocolate Cake

    4 ounces fine-quality bittersweet chocolate (not unsweetened) 1 stick (1/2 cup) unsalted butter 3/4 cup sugar 3 large eggs 1/2 cup unsweetened cocoa powder plus additional for sprinkling Preheat oven to 375°F and butter an 8-inch round baking pan. Line bottom with a round of wax paper and butter paper. Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate.     • 1. 1. Preheat oven to 375 degrees.
    • 2. Line bottom of 8-inch springform pan with parchment paper.
    • 3. Spray parchment paper and sides of pan with cooking spray.
    • 4. 2. Combine 2/3 cup brown sugar, chocolate, cocoa and boiling water in small bowl.
    • 5. Stir until chocolate is melted.
    • 6. Let cool to room temperature.
    • 7. Whisk in egg yolks. Set aside.
    • 8. 3. Finely grind almonds in food processor or clean coffee grinder.
    • 9. Add xanthan gum. Set aside.
    • 10. 4. Using electric mixer, beat egg whites and cream of tartar until soft peaks form.
    • 11. Add 1 tablespoon brown sugar, vanilla extract and almond extract.
    • 12. Beat until stiff but not dry.
    • 13. 5. Carefully whisk almond mixture into chocolate mixture.
    • 14. Fold in eggs whites in two additions.
    • 15. 6. Transfer batter to prepared springform pan. Wrap bottom in aluminum foil to prevent leaking.
    • 16. Place in larger pan of boiling water so that water comes up one inch on outer sides of springform pan.
    • 17. 7. Bake 35 minutes or until toothpick inserted into center comes out clean.
    • 18. Cool cake in pan on rack. Dust with powdered sugar.
    • 19. Cut around edge of cake to loosen from pan edges.
    • 20. Release pan sides. Cut into 10 slices
