Chocolate Dipped Fruit

Ingredients

  • ■   8 oz strawberries
  • ■   8 oz pecans
  • ■   8 oz dried apricots
  • ■   8 oz pistachios or macadamia nuts
  • ■   8 oz cocoa nibs
  • ■   8 oz crystallized ginger

Description

Gather miscellaneous fresh fruit and nuts such as strawberries, clementines and pecans or larger dried fruit pieces such as dried apricots or dried pineapple pieces. Gather miscellaneous toppings into small bowls such as chopped pistachios or macadamia nuts, chopped dried banana chips or pineapple, cocoa nibs, crystallized ginger and turbinado sugar. Place about ½ cup chocolate in a small glass bowl. Microwave on medium setting for 1 minutes. Stir. Continue microwaving at 20 second intervals until melted, stirring after each interval. Or, chocolate can be melted on the top of a double boiler over simmering water (not boiling). Line a baking sheet with parchment or wax paper. Dip ½ to ? of each fruit into the melted chocolate. Let excess drip back into bowl. Place on baking sheet. Sprinkle with desired topping Refrigerate 30 minutes or until set.
