Chocolate Chip Coconut Flour Muffins

  • ■   8 oz Organic Coconut Flour
  • ■   salt
  • ■   honey
  • ■   2 oz Pure Vanilla Extract

  • Pre-heat oven to 350F.
  • Line a 12-cup muffin pan with baking cups or use an unlined silicone muffin pan (baker’s note: coconut flour tends to stick).
  • Mix coconut flour, salt, and baking soda together with a whisk in a small bowl.
  • Use a whisk or hand mixer to combine eggs, honey, canola oil and vanilla extract in a large bowl. Be sure the wet ingredients are well incorporated.
  • Add dry ingredients to wet ingredients and mix well with a hand mixer or whisk.
  • Fold chocolate chips into batter.
  • Divide batter evenly in the muffin pan.
  • Bake for 25 minutes. Muffins are ready when a toothpick inserted into one comes out clean.
