Baby Greens with Balsamic Vinaigrette

Ingredients

  • ■   4 oz garlic clove, halved
  • ■   balsamic vinegar
  • ■   dried shallot
  • ■   olive oil
  • ■   4 oz black pepper
  • ■   salt

Description

1 garlic clove, halved 6 (1/2-inch-thick) slices French bread baguette 2 tablespoons balsamic vinegar 1 tablespoon water 2 teaspoons dried shallot 2 teaspoons olive oil 1/4 teaspoon black pepper 1/8 teaspoon salt 8 cups gourmet salad greens Preheat oven to 400 degrees. Rub garlic on one side of each bread slice and place on baking sheet. Bake for 4 minutes on each side or until golden. Combine the vinegar and next 5 ingredients (vinegar through salt) in a jar. Cover tightly and shake vigorously. Combine vinaigrette and greens and toss well. Serve salad with garlic croutons. Recipe adapted and photo from CookingLight.com
