Apricot & Fig Tart

  • ■   Clearbrook Tart Shells
  • ■   Dried Apricots


2 1/4 cups orange juice 7 oz dried apricots 6 oz dried figs, halved lengthwise 2 tbsp (1/4 stick) butter, melted 1/2 cup granulated sugar 1package Clearbrook Tart Shells Powdered sugar, for dusting Whipped cream, to servePreheat the oven to 400°F. Place orange juice, apricots and figs in a medium saucepan on medium heat. Bring to a boil. Reduce heat to low; simmer, uncovered, 4-5 mins until fruit is plump and tender. Drain. Brush the inside of the tart shells with butter. Arrange fruit in tarts. Bake tor 10-20 mins until tarts are golden. Carefully put tarts onto serving plate using a spatula. Dust with powdered sugar. Serve with whipped cream, if desired. Recipe adapted from
