Prague Powder #1 by OliveNation is a curing salt made from sodium nitrite, table salt, and pink food coloring. Also called Insta Cure #1 or DC #1, Prague Powder #1 can be used to cure meats for cooking, smoking, and canning. It also adds salty flavor and pink color to cured meats. Prague Powder #1 is for short-cure meats that will be cooked and eaten in a relatively short period, like bacon or sausages. It is not the right curing salt for long-cured and dry-cured meats such as hard salami. Use this curing formula to cure poultry, fish, ham, lunch meats, corned beef, and more. This product is non-GMO and gluten-free.

Please note that Prague Powder #1 cannot safely be used as a substitute for Prague Powder #2, as they are entirely different formulas and have different applications.

How to Use
Use 1 ounce of Prague Powder #1 to cure 25 pounds of meat. It's imperative to use the right amount to safely cure meat or fish. This product is not a substitute for table salt or sea salt. Please use caution when working with this product. Follow instructions for use, as incorrect use can affect food quality and ultimately health.

Storage
Store in a dry, cool place.

PLEASE NOTE: This product is intended for culinary uses only: cooking, baking, and other human food applications.

I have made one pork loin into Canadian Bacon and it had a great taste, texture and color but just a little salty.
