Peter's Chocolate Burgundy Dark Chocolate Block (170 Viscosity) is a 10-pound block of semisweet chocolate. It's made with special cocoa beans giving it a distinct reddish tint and wine-like flavor notes. This large block of chocolate is excellent for making large quantities of baked goods or candy. A serrated knife works well for breaking down this chocolate block. When using the chocolate for dipping/fountains or candy making, it's best to temper it. Chocolate used in baked goods does not typically require tempering. Peter's Chocolate Burgundy Dark Chocolate Block has 170 viscosity. This means that it's 170 times thicker than water. Viscosity 40 and lower is for chocolate fountains and dipping applications where the chocolate needs to be thin. Viscosity higher than 50 is for candy molds, chocolate bark, and other instances where the chocolate has to hold its shape. You can lower the viscosity of chocolate by thinning it with oil.
