What's the Difference Between Cacao and Cocoa?
All cocoa beans start out as cacao beans. To become cocoa beans, cacao beans are roasted at very high temperatures (as high as 300°F). During the heating process, the beans lose some of their antioxidants. Since cacao beans are much less processed, they retain more antioxidants and fiber.
*If a recipe calls for Dutch-process cocoa powder, it's best not to sub in Cacao Powder. The flavor of your recipe could be affected.
