How to Prepare Green Split Peas
Unlike other legumes, green split peas are quick cooking and can be added to your recipes without pre-soaking. Best known as the main ingredient in split pea soup, green split peas can be added to a variety of salads, soups and stews.
Try making a delicious pot of split peas soup, by sautéing onions, carrots, celery and garlic in olive oil in a large pot. If you like, you can add a ham chunks. Add 2 cups of peas and at least 8 cups of water or broth, with salt, a bay leaf and other seasonings. Bring to a boil for 30 minutes, then cover and reduce the heat, simmer for 2 hours or until tender. Serve with corn muffins or crusty french bread.
