How to Prepare Red Kidney Beans
Soak 1 pound of dried kidney beans overnight in at least 8 cups of cold water. Drain and rinse.Place in a large soup pot and cover the beans with cool water. Bring to a boil for 30 minutes, add seasonings to taste, then reduce the heat to a simmer and cook for 90 minutes or until tender.
