Buckwheat groats are triangular seeds with a nutty flavor and crunchy texture. Buckwheat is high in protein, rich in iron, flavonoids and has a high concentration of essential amino acids. Buckwheat is commonly ground into flour and used to make pancakes, breads and pasta. Sprout raw buckwheat groats and add them to your homemade granola, cookie and muffin recipes. They can also be cooked and served as a hot breakfast porridge. How to Prepare Organic Buckwheat Groats To enhance the naturally nutty flavor of the buckwheat groats: Lightly toast them in a skillet with a little olive oil for a 5-10 minutes. How to Sprout Organic Buckwheat Groats: Thoroughly rinse 2 cups of buckwheat groats in a strainer. Then place them in a large glass container that has a tight-fitting cover and cover with cold water. Mason Jars are perfect for this job. Soak them for 1 hour. It is normal for them to produce a thick, gelatinous substance called mucilage. Thoroughly wash it off the groats with cool water. Lay the groats out in a single layer on a tray and leave out at room temperature. Rinse the groats in fresh, cold water once a day for 2-4 days, or until you notice the ‘little tails’ start to sprout. Store sprouted buckwheat groats in an airtight container.
