Quinoa is high in protein and essential amino acids. It is also is high in Vitamins B & E, iron, zinc, potassium and calcium.
There are three main varieties of quinoa: Red, Black and White. Quinoa is a popular ingredient in Mediterranean and Middle Eastern foods, like tabouli.
OliveNation Black Quinoa remains a little crunchy when cooked, making it an excellent ingredient in salads or as a side dish. Cook black quinoa and mix with fresh vegetables, fresh lemon juice and olive oil for a refreshing summer salad.
How to Prepare Black Quinoa
Rinse the quinoa to remove any saponins, a naturally occurring bitter coating. Boil 2 cups of water or stock, then add 1 cup of quinoa. Reduce the heat to low and simmer for 15 - 20 minutes. It is done when the grain pops and you see a ‘curly tail’.
*One cup dry yields 2 cups cooked.
