OliveNation Organic Anasazi Beans are also known as New Mexico cave beans, Aztec beans, and appaloosa beans. The little burgundy and white speckled beans resemble kidney beans in shape. These heirloom beans have been a staple of Native Americans diets in Colorado, Arizona and New Mexico. Anasazi bean are packed with protein, rich on potassium, iron and folate and they are high in fiber.

With a slightly sweet flavor, anasazi beans are an excellent choice for the spicy food in Latin American, Mexican and Southwestern cuisines. Instead of pinto beans, try anasazi beans in your favorite soup or beans and rice recipe. 

How to Prepare Anasazi Beans
 
Before cooking, you should soak the beans overnight in at least 8 cups of cold water. Drain and rinse, then cover the beans with cool water in a large pot. Bring to a boil for 30 minutes, cover the pot and reduce the heat to a simmer and cook for 2 hours or until tender. Add ham or cook without meat for a vegetation option. 
You can also make a savory baked bean casserole with anasazi beans, celery, carrots, onions, corn, parsley and cilantro. Garnish with sour cream, Monterey Jack Cheese and slices of fresh avocado.
