Mayocoba Beans, aka Canary Beans or Peruano Beans, are named after a small village in Mexico. They're a frequent addition to Mexican soups and side dishes such as refried beans. They're also frequently cooked in Peruvian dishes. Mayocoba Beans taste soft and buttery.

How to Cook Mayocoba Beans:
Here is the basic cooking method: Sort the Mayocaba beans and rinse well. Soak overnight in cold water. Rinse and place in a large pot and cover with fresh water. Bring to a boil, reduce heat, and simmer for 45 minutes until tender.

If you need to cook the beans faster, consider using a pressure cooker. If there's no time for soaking overnight, use the quick-soak method. Brink the beans to a boil over high heat and cook for one minute. Then let them soak in the warm water for an hour.

Cooking Suggestions: These beans taste great on their own with salt and spices. Some ideas for using them includemaking a bean "hummus," adding to salads, or pureeing in soups to add creaminess without adding fat.
