Dried Maitake Mushrooms by OliveNation are broken into pieces for convenience. The Maitake Mushroom is commonly called Hen of the Woods for its fluffy, hen-like appearance. The mushroom is relatively large – some growing to 30lbs or more! Hen of the Woods Mushrooms have a light taste, making them a versatile ingredient in many dishes. We like them in pastas and risottos. Maitake Mushrooms are meaty and perfect for meatless dishes.

How to Use Dried Maitake/Hen of the Woods Mushrooms:
Rinse the mushroom slices under cool water. If making a dish with liquid that cooks for at least 25 minutes, there's no need to rehydrate. For all other recipes follow these steps to rehydrate: Place mushrooms in a heat-proof bowl, bring some water to a boil, carefully cover the mushrooms with the hot water, and let soak for 15 to 20 minutes. Save the soaking liquid to add extra flavor to your dish.

    The maitake mushrooms I ordered arrived quickly and in good condition. I am pleased with the product. Quantity seems like a small amount but in reality is quite a bit as product is dried.

    I wasn't sure how much to order so I ordered the smallest amount, was more than enough(4 oz.)
    The quality was very good, moisture content very low

    I have ordered several pounds of Maitake Mushrooms over the last several years. I usually order before I run out. Thus the new bag(s) may sit carefully stored in my pantry for a month or two perhaps more.

    When I open a new bag I transfer the mushrooms to a large 1 gal glass canning jar which I open 20-30 times to extract small amounts of mushrooms over a period of 2-4 months. The last mushrooms in the jar have always been edible and fresh tasting even after having been in the jar for several months.

    However the last time I ordered a pound the bag integrity apparently had been compromised during processing or storage at your facility.

    When I first opened the bag the mushrooms were soft and spongy and had already absorbed enough moisture to become spoiled and bad smelling. I had to throw them out.

    This one reason why have not ordered from you recently.
