OliveNation's Lemon Emulsion is a natural water-based flavoring made using water and xanthan gum instead of alcohol or propylene glycol. This thick, concentrated formulation offers easy mixing and measuring, no funny aftertaste, and will not "bake off" in high temp applications. Using Lemon Emulsion:
Use as a 1:1 replacement for extracts in recipes.
Substitute lemon emulsion for lemon zest by using half the amount called for. For example, 1 tsp lemon zest = 1/2 tsp lemon emulsion.

Lovely Flavor
I'm sold on emulsions after using this Olive Nation Lemon Bakery Emulsion. The flavor was perfect for the sweet potato pie I made for Thanksgiving. I always worry how the flavor of some lemon extracts will translate after baking because they have such a strong alcohol smell. When I opened this Lemon Emulsion for the first time and didn't smell the brash alcohol smell, I knew transitioning to emulsions was the right choice. I purchased the Orange Emulsion from Olivenation as well and can't wait to use it in my orange sugar cookies.

Happy discovery
I can use this for everything , including a quick whip up of lemon curd, or glaze. Lemon blueberry muffins always in season in my house (Frozen Blueberries). I use a couple teaspoons for 12.
