Potato Salad with Capers

Ingredients 4 Large Potatoes 6-8 tblsp Extra Virgin Olive Oil 1-2 tblsp of mayonaise 4 tblsp good quality capers Trapani Sea Salt to taste Chopped Parsley for garnish Boil the potatoes in their jackets and then set aside to cool. When cooled, peel and dice each one. Mix in the other ingredients: olive oil, capers, mayonaise, salt. Garnish with parsley and set aside for 1/2 hr or refrigerate for a few hours.
