Gluten Free Pancakes

Cook Time: Minutes



    1 cup pancake mix 2 large eggs 3/4 cup water, milk or milk substitute Oil for frying Whisk together eggs and liquid of your choice. Add the pancake mix. Mix and stir until combined. Heat oil in pan until very hot. Spoon batter into pan and flip over when first side is cooked. Top with maple syrup, agave syrup, honey and/or fruit. Variations: add blueberries, nuts, banana, seed, chocolate chips, etc
