Feta Salad with Vegetables

Serves: 6-8
Cook Time: Minutes



1 green pepper, chopped coarsely 1 medium red onion, chopped 2 ripe medium tomatoes 1 small cucumber, peeled, seeded and chopped 1/2 lb. Greek Feta cheese 3-4 Tablespoons extra-virgin olive oil 2 Tablespoons finely chopped flat leaf parsley Lebanese Za'atar ground or crushed red pepper sea salt Half the tomatoes and squeeze out some of the seeds and watery pulp. Chop and add to other chopped vegetables. Dice or crumble the cheese and add to the vegetables. Gently stir in the olive oil and parsley. Add a pinch of za'atar and red pepper. Taste the salad, adding salt if necessary. Serve immediately or hold to develop flavors. Do not refrigerate.
