Sort beans and rinse well. Soak 1 cup of beans in water for 4 to 6 hours. They can also be soaked overnight. Drain and place in a pot. Add fresh water and cover the beans by 2 inches. Bring to a boil and then reduce heat and simmer for 40 to 45 minutes until tender.
Storage: Store in a cool, dry place.
