Fava Beans are also called broad beans or Szechuan beans as they're known in China. These large flat beans grow in pods. Be sure to remove their peel before use.

Color: Greenish-brown
Texture: Meaty and starchy
Flavor: Bold and earthy

Basic Preparation: Sort beans and rinse well. Soak them overnight, then remove their peels by sqeezing the beans. Rinse and place in a large pot and cover with water. Boil for 3 minutes. Then reduce heat and simmer until tender, about 2 hours. Skim off the foam as the beans cook.

Cooking Suggestions:
There are many ways to cook Fava Beans -- stew, boil, puree, sautée or roast, You can:

  • Puree with olive oil and serve with bitter greens like they do in Southern Italy.
